Coffee and Walnut Cake Recipe - Quorn WI

of Christine, our Secretary, here's the quickest and easiest cake
recipe we've ever had. Christine always manages to sell these cakes
and has people coming back for more. She says its an old WI favourite.
Take 6oz/170 g of SR flour and a teaspoon of baking powder and sieve
together. Add to this 6oz/170g of softened butter, 3 eggs, 3oz/85g
caster sugar, 3oz/85g golden muscovado sugar and a teaspoon of coffee
essence. Beat well for 2 minutes ( less if you're using an electric
mixer). Add 20z/55g of chopped walnuts.
You can divide between two sponge tins, well greased (or if like me
you like an easy to fill cake. try a spring based tin and slice in
half afterwards - it still works).
Bake in the oven at 180C/gas 4 (a fan oven needs 160C) for 25-35 minutes
until springy to touch and well risen.
Now -fill with icing (1 tablespoon coffee powder, 2 tablespoons boiling
water, 8oz/225g of icing sugar and 5oz/140g soft butter beaten together)
and put a few decorative walnut halves on icing dots on the top.
Absolutely scrumptious!
